ingredients
100g butter
180g castor sugar
50g sour cream or yogurt
3 eggs
1 tsp vanilla essence
1 tsp lemon or orange zest
210g plain flour
1 tsp baking powder
fruits: peaches, strawberries, blueberries
washed, cut & drain fruits & set aside

instructions
- cream butter and sugar till light and creamy
- mix in eggs one at a time
- add in vanilla essence and zest and mix well to combine ingredients
- add in sour cream/yogurt into the mixture
- add in flour slowly & mix well
- pour batter into prepared pan and smooth out surface
- arrange fruits on top of the batter do not press fruits down into the batter – decorate as desired
- bake in pre-heated oven at 180 degrees celsius for about 60-70 min – or till skewer/toothpick comes out clean (when inserted into center of cake)
- cover the top with foil int he last 15 min of baking (at the 45 min mark), this prevents top from getting over-brown
- leave cake to cool in the pan for about 5-10 minutes after taking out of oven
- take out of mould and transfer to wire rack, let cool completely
